Old School: 2023 Carbonic Pinot Noir

The 2023 Little Soul Carbonic Pinot Noir is crafted from grapes harvested from the organic vineyard where we both farm and reside, situated in the Adelaida District of west Paso Robles, California.

The 2023 Carbonic opens with complex aromas of plum skin, blackberries and sagebrush with subtle notes of all-spice.  The palate has a velvety texture with gentle flavors of raspberry coulis and black tea. 

This wine employs an “old-school” style of winemaking known as carbonic maceration, wherein fermentation occurs inside the grape itself. The process involves placing whole clusters in a sealed vessel filled with carbon dioxide. The oxygen-deprived environment prompts an intracellular fermentation within the grape berries. Once the grapes slightly break open, the natural sugars are converted into alcohol by native yeasts, initiating fermentation from within the grape itself.

 

 This process results in a wine that is distinct from most red wines. The limited skin contact and minimal movement during production lead to reduced extraction of phenolics (color/tannins), yielding a light-bodied, delicate, low-alcohol red wine.  The wine underwent a carbonic maceration process lasting five weeks.

 

This libation is best enjoyed when served slightly chilled.
